Should an Orlando resort or vacation ownership company start with Service Cloud or Marketing Cloud?

Usually service first. Service Cloud forces the decisions that marketing later depends on: how a guest or owner is identified, which systems feed their profile and who can see what. Once agents are working from reliable records, Marketing Cloud journeys can target them with confidence. Starting with marketing tends to push unclean data into campaigns, which then have to be rebuilt after the service rollout fixes the underlying records.

Can one Salesforce org serve several hotel or restaurant brands?

Often, yes. A single org with record types, business units and sharing rules per brand lets shared guests be recognized across properties while each brand keeps its own processes and reporting. Separate orgs make sense when brands are sold independently, have very different processes or face different regulatory demands. We weigh those factors in discovery and document the reasoning, because the choice is expensive to reverse later.
